The summer drink for the past couple of centuries has been the spritz which originated in Italy.  The classic spritz was made with prosecco, Aperol, and a splash of soda water. Through the years, the Aperol has been swapped with other bitters such as Campari or Cynar. Perfect for summer, it is usually served with ice cubes and citrus slices. The beauty of the spritz is how simple it is to make, and how delicious the end result is. Here are the spritz cocktails of 2017 that you are going to want to try this summer with friends.

A twist on the classic Aperol Spritz, this Grapefruit-Aperol Spritz is a fantastic drink to cheers with friends at the start of summer. All you need is to fill a glass with ice, starting with 4 ounces of prosecco, 1 ½ ounces of grapefruit juice, ½ ounce of Aperol, and finished with a splash of club soda. After a gentle stir, add a spiral citrus peel or wedge for garnish, serve, and enjoy.

A blend of a classic gin fizz and a spritz, try a Gin Spritz by combining 4 ounces of prosecco, 1 ounce of gin, and club soda in a glass with ice. For garnish, both mint leaves and blueberries make for a gorgeous summer treat.

Playing off of the latest rose wine trend, the Rose-Aperol Spritz is a great people-pleaser this summer. This cocktail is great for a party, because it can be made in bulk like a punch. Start with a bottle of sparkling rose wine, add ¾ cup of passion fruit juice, ¼ cup Aperol, ¼ cup lime juice, and 4 teaspoons of sugar.

For a floral note, try an Elderflower and Lavender Spritz. Start with ice and 4 ounces of prosecco, add 1 ½ ounces of elderflower liqueur (like St. Germain), 1 ounce of lavender simple syrup, and top with club soda. Garnish with a sprig of elderflower or lavender for a dainty touch.

Lastly, to take advantage of summer’s berries, try a Cassis Spritz, which is as simple as it gets. Combine ice, 4 ounces of prosecco, 1 ounce of crème de cassis (any blackcurrant liqueur), and top with club soda and blackberries for serving.
